The carving knife is the one to grab when it's time to carve up that tasty turkey on thanksgiving.  For your meat cutting duties whether it's beef, pork, or poultry a quality carving knife can make the job a lot easier.  Carving is one of those times when a very sharp knive is a must, it's just to dangerous to use a dull knife.
